Haar met sh\u014dji papier bedekte exterieur geeft niet al te veel weg. Zodra je binnenstapt zie je een intieme ruimte met traditionele Japanse authenticiteit gevormd door het handgemaakte houten interieur, de shamisen en shakuhachi muziek en de enorme gastvrijheid van Ayumi en Atsuhito Hosono.<\/p>\n<p>\u201cIk hou ervan om dingen flexibel en rustig te houden. We hoeven niet te veel publiciteit. Geweldige gasten trekken andere geweldige gasten aan. De naam van het restaurant is ter ere van Unemo, de moeder van de heer Nakae. In haar 40-jarige historie is er niet ge\u00efnvesteerd in publiciteit, maar kwam de groei door mond-tot-mond reclame. Ruim 90% van de gasten zijn Nederlandse en internationale lokale inwoners. Hij werd geboren in een gezin dat een washoku (Japans eten) restaurant runde in de stad Kurume in Fukuoka prefectuur, op het zuidelijke eiland van Ky\u016bsh\u016b. Zodoende groeide de heer Hosono op in de Japanse horeca. Na zijn geslepen 3-jarige stage is hij verder gegaan naar een hotel-restaurant in Kobe wat helaas \u201cte industrieel\u201d voor hem bleek te zijn. Aangezien hij altijd al ge\u00efnteresseerd was in buitenlandse culturen door de be\u00efnvloeding van Westerse films besloot hij om de mogelijkheid om te werken in een restaurant in Amsterdam aan te pakken in 1999. Terwijl zij studeerde aan de culinaire school om gecertificeerd kok te worden, spaarde zij om twee jaar lang te kunnen backpacken in Zuidoost-Azi\u00eb en het Midden-Oosten alvorens zij zich zou vestigen in Cairo om te werken bij een Japans restaurant. Daar werd zijn vervolgens geworven door dezelfde restaurant in Amsterdam waar haar echtgenoot ook voor zou werken.<\/p>\n<p>Twintig jaar vooruit spoelend zijn ze nu ouders van zes kinderen tussen de \u00e9\u00e9n en zeventien jaar oud. De oudste zoon werkt in de keuken en heeft veel geleerd waardoor hij nu praktisch alles beheert. Naast diverse soorten verse sashimi, verse en aburi (gebraden) nigiri en sushirollen biedt hun menu allerlei traditionele Japanse gerechten.
