Je komt binnen in elegante ruimte met een hoog plafond met tegen de muur een verzameling van Japans aardewerk en porselein. In het restaurant kan je plaats nemen in het hoofdvertrek aan de straatzijde of juist op een lichte afgezonderde plek op de binnenplaats achter de toonbank. Daarom heeft hij een restaurant geopend dat in feite datgene aanbood wat hij zelf graag at. Bij het bereiden van deze gerechten maakte hij gebruik van zoveel mogelijk lokale ingredi\u00ebnten. Sinds de opening in 1989 drie decennia geleden is het concept een succes gebleken. Kaisen-don (diverse rauwe zeevruchten op rijst) is prachtig en vers.
